Serves 4
Heat the Oven to Gas Mark 6. Spray the base of the cake tin with cooking spray and then wrap the base with grease proof baking paper
Place the biscuits into a sandwich bag and tie it up. Take a rolling pin and bash the biscuits until they are crushed into a big pile of crumbs.
Put 2 tablespoons (big spoon) of margarine into a saucepan. Melt the margarine making sure it doesn't burn. As soon as it has fully melted take the pan away from the heat.
Pour the crushed biscuits out of the bag into the pan of margarine and stir thoroughly.
Pour the biscuit mixture into then cake tin and use a wooden spoon to pat down and flatten the mixture into the tin so that it is flat and round. This is the base for the Cheesecake.
Whisk 250 grams of Light Cream Cheese and Greek Fat Free Yogurt into a large the bowl.
Add 2 teaspoons (small spoon) of Vanilla Extract and 2 tablespoons (big spoon) of Sweetener to the large bowl. Whisk 2 eggs in a jug (or a small bowl) and pour them into the large bowl.
Whisk the mixture well until it is fluffy (looking like pouring cream). Remove the biscuit base from the oven and turn the oven heat down to Gas Mark 4.
Pour the Mixture into the cake tin on top of the biscuit base and spread it out so it is all evened out. Place the cake back in the oven for 25 minutes.
When the cake is done, turn off the oven and leave the oven door to allow the cake to cool completely. Leave the cake to cool down for 45 minutes. When the cake has cooled completely, remove it from the oven.
Place the chocolate buttons and various berries on top of the Cheesecake as you see fit. Make sure to spread them out to make it look more appealing. Once you are happy that there are enough chocolate buttons and berries decorating the top of the cake, you are done.
You have made Dan's Berry Chocolate Cheesecake. Now cut yourself a slice, grab a spoon and dig in!
1. If you don’t want to use fruit or chocolate for this cheesecake, it’s perfectly fine to eat as a vanilla cheesecake.
